the last grilled chicken pizza i made was really mannish.

and i was eating a lot of chicken

so i grilled chicken breasts first, and put 8 breasts on the pizza, pinwheeled from the center for even slicing.

a lattice of sweet baby rays and ranch instead of sauce.

each slice had a whole chicken breast on it. it was ridic.

Anyone else regularly make stock? Poultry stock kind of weirds me out when it turns into jelly in the fridge, but apparently that's the sign you've done it right and signifies it's full of nutrients ... or something, according to the Internet.

gelatin comes from bones when you boil them, thats why stock turns into jelly.

^^ I love my rice cooker but don't use it nearly as much. That'll change in the winter when I can set up porridge in it to cook and be ready for me right as I wake up.

why does hoisin always get such a weird and unappealing texture after having had it cooked onto something, refrigerated, and reheated?

The cornstarch in the sauce causes it to congeal when in the fridge.

oh. i guess i've never read the label on the hoisn (nor can i)

http://www.epicurious.com/recipes/food/views/Alaskan-Black-Cod-with-Hoisin-and-Ginger-Sauces-357230

this was good. added some honey to the hoisin/sambal oelek sauce.

that makes sense though. it's just kinda gross.

[Edited on October 7, 2011 at 1:27 PM. Reason : also f mincing stuff for sauces, microplane that ginger and garlic]

I'm going to try to make a chicken pot pie tonight. It looks pretty easy from what I can tell. I just can't decide if I want a pie topping or a biscuit topping. I don't really want to make dough from scratch. Anyone tried either or is everyone an over-achiever itt? Also, if anyone knows of any great pot pie recipes please to share.

I used a super easy cheddar biscuit recipe from epicurious that they have with one of their pot pie recipes. You mixed all that shit together with a spoon and then plopped it on.

Any ideas for something Halloweeney that I can make in mini muffin cups? I have some cute liners but am not feeling cupcakes (and someone else is bringing those anyway).

Oh! Make an easy peanut sauce by cooking down peanut butter, coconut milk, and soy sauce with something spicy to toss noodles and veggies in.

If I tell you it's far less gross.

I also have vomit and rotting flesh sliders. And deviled eyeballs. But those are boring.

i went to someone's house for thanksgiving that had a whole collection of ultramarine le creuset and a big ass wustof knife block, but all the knives were dull as fuck and there was no sharpener to be found. the bird was pretty comical-looking after carving, there's nothing like using a $300 butter knife.
